Matt Keller opened Game Cut in 2017 after ten seasons running the cutting room at a larger plant. He kept the same 18-foot stainless rail and added a second scale so every animal is recorded on arrival and again on the way out.

Most clients are local hunters who want their own meat back, labeled and dated. No contracts, no minimums beyond the animal itself. The cut sheet is filled out while the carcass is still on the scale.

Six steps from hide to freezer

Every animal is weighed on arrival. Every package is labeled with species, date and weight.

Skinning & Quartering

Skinning & Quartering

Hide removed, carcass split into four primal sections, weighed and hung on stainless rail. Standard turnaround two days.

Custom Butchering

Custom Butchering

Primal cuts broken down to steaks, roasts and stew meat to your thickness and portion size. Cut sheet reviewed before final packaging.

Sausage & Ground

Sausage & Ground

Trim ground or turned into fresh sausage links or bulk. Standard mixes or custom seasoning. Minimum 20 lb batch.

Curing & Smoking

Curing & Smoking

Hams, bacon and loins cured and smoked in-house. Maple or hickory. Ready in five to seven days.

All cuts sealed in heavy-gauge bags with species, cut and weight printed on each label. Freezer-ready.

Drop off

Bring the animal in

Tag number, species and any special instructions. We weigh it, give you a receipt and a date. Pickup is by appointment with payment.
